Rocky Mountain Oysters Recipe

2 pounds calf testicles*
2 cups beer
2 eggs, beaten
1 ½ cups all-purpose flour
¼ cup yellow cornmea1
Salt and ground black pepper to taste
Vegetable oil**
1 tablespoon hot pepper sauce

*  Be sure to ask your butcher for calf testicles, not bull testicles. Calf testicles are the size of a walnut and are much more tender than the larger bull testicles.

** Use enough vegetable oil to fill your frying container halfway to the top (to allow for bubbling up and splattering) and to completely cover calf testicles while frying.

With a very sharp knife, split the tough skin-like muscle that surrounds each testicle. Remove the skin (you can remove the skin easily if the testicles are frozen, then peel while thawing). Slice each testicle into approximately 1/4- to 1/2-inch-thick ovals. Place slices in a large pan or blow with enough beer to cover them; cover and let sit 2 hours.

In a shallow bowl, combine eggs, flour, cornmeal, salt, and pepper. Remove testicles from beer; drain and dredge thoroughly in the flour mixture. In a large, deep pot, heat oil to 375 degrees F. Deep fry 3 minutes or until golden brown (will rise to the surface when done). Drain on paper towels.

Serve warm with your favorite hot pepper sauce.

Famous Authentic Chinese Recipe – Braised Bean Sprouts with Chicken Testicles

Ingredients:

  • 160g chicken testicles
  • 5 black mushrooms
  • 160g bean sprouts
  • Adequate amount of sliced carrot

Seasonings:

  • Adequate amount each of MSG, salt, wine, starch, sugar, sesame oil, soy sauce, pepper, fine stock, chicken fat and lard

Directions:

  1. Fry the bean sprouts until cooked for use.
  2. Scald the chicken testicles in boiling water until cooked, scoop them out and skin them.
  3. Heating oil in the pot, sprinkle wine in, pour more than a half bowl of fine stock in, put black mushrooms slices and carrot slices in, boil them until cooked, add MSG, salt, sugar, sesame oil, soy sauce and pepper to stir well, stir wet starch in, put the chicken testicles in, add chicken fat to stir well, lift the mixture from the pot, place it in a plate and pad the bottom with the bean sprouts for serving.

Testicules de Mouton aux Pois Chiches et Oignons

Ingrédients pour 6 personnes :

2 kg de testicules de mouton
1 verre de pois chiches trempés la veille puis pelés
1 kg d’oignons émincés
1 cuillerée à soupe de persil haché
100 g de beurre
1 pincée de safran
1/2 cuillerée à café de poivre
sel
Préparation :

Retirer la peau des testicules, les brasser légèrement avec le sel
puis les rincer dans plusieurs eaux. Les découper en gros dés puis les cuire dans la cocotte avec le beurre, un oignon émincé, le poivre, le safran, les pois chiches et 2 verres d’eau. Couvrir et cuire 1 h 1/2 à feu doux. Ajouter alors les oignons restant, le persil et un peu de safran, mélanger et faire réduire la sauce à feu plus vif pendant la cuisson des oignons. Rectifier l’assaisonnement.
